Quick and Easy Chickpea Salad

Whenever I’m in a hurry, this is my favorite go to salad. It’s chock full of delicious things like tomatoes, feta, and avocados. This works really well as a side dish, but is perfect for lunch. I don’t recommend storing in the refrigerator over night as the avocado can turn brown and break down in the acidic dressing.

1 15 ounce can of garbanzo beans, drained and rinsed
1 medium avocado, pitted and cut into bite sized pieces
1 medium tomato, seeded and finely chopped
cup crumbled feta
2 tbsp finely chopped red onion
Dressing:
2 tbsp cider vinegar
½ tbsp olive oil
1 tsp kalamata olive brine
pinch of salt and black pepper

Combine dressing in a large plastic or glass bowl (metal can be reactive with acidic dressings). Remaining ingredients and gently fold together.

Serve salad right away or cover bowl with plastic wrap and place into refrigerator for 1 hour before serving. Do not store overnight. If planning to make ahead, leave feta and avocados out of the salad and add them right before serving.
