Prosciutto Wrapped Chicken Breasts

These chicken breasts are flattened, wrapped in prosciutto and then topped with mozzarella cheese. Add some sliced tomatoes on top or on the side for a delicious meal. You definitely want to try these Prosciutto Wrapped Chicken Breasts.

2 medium chicken breast, boneless and skinless
1 package of high quality prosciutto
4 slices of part skim mozzarella, thin slices
¼ cup shredded parmesan
1 tsp Italian seasoning
¼ tsp granulated garlic
¼ tsp salt
¼ tsp black pepper
¼ tsp red pepper flakes (optional)
4 roma tomatoes, sliced (optional)

Place chicken breasts onto a large plastic wrap lined cutting board. Put another layer of plastic on top of chicken. Using a kitchen mallet, flatten chicken breasts to a ¾” uniform thickness. Remove from plastic and season with salt, black pepper, garlic, and Italian seasoning, and red pepper flakes.

Carefully wrap each breat with 3-4 pieces (or more) of prosciutto. Place into a baking dish and bake for 25 minutes at 350 degrees F.

After 25 minutes, sprinkle each chicken breast with 2 tablespoons of shredded parmesan and top with 1-2 slices of mozzarella (depending on slice size). Place chicken back in oven until it is fully cooked, or at least and internal temperature 165 degrees F. I like my chicken cooked to 175 degrees F., but that choice is up to you.

Remove from oven and serve with sliced tomatoes on top or on the side. You can omit the tomatoes and serve with a side salad or zoodles instead.
