Marinated Zucchini

Marinated Zucchini

These quick and easy marinated zucchini slices can be cooked quickly on the grill, in a skillet, or baked in the oven. They are a great low carb, low glycemic side dish that goes well with pretty much any meal.

4 large zucchini, cut into thirds lengthwise
¼ cup red wine vinegar
2 tsp olive oil
1 garlic clove, minced
½ tsp dried oregano
¼ tsp salt
¼ tsp black pepper

Wash, dry and cut zucchini into equal thirds. Place into a large resealable plastic bag.

Combine remaining ingredients in a small bowl. Pour marinade over zucchini and squish bag around to distribute mixture. Release air from bag and seal. Place into refrigerator for 30-40 minutes.

Prepare grill for medium heat. Place zucchini slices onto grill and cook for 3-4 minutes per side, or until they are tender, but not mushy. Remove and serve.

Cook in a skillet with a ½ tablespoon of oil; about 4 minutes per side.

If baking, place zucchini on a parchment lined baking sheet and cook at 350 degrees F. for 12 minutes, or until tender.

Store leftovers in an air tight container in the refrigerator for up to 5 days after initial preparation. Do not freeze. Zucchini will become very mushy when reheating in a microwave.
