4 bone-in rib chops (about 6 ounces each), trimmed of excess fat around chop
8 medium mushrooms, cleaned and sliced
½ medium onion, sliced
1 clove garlic, peeled and smashed
1 ¼ cups organic vegetable broth
½ cup sour cream or plain yogurt
1 tsp salt
½ tsp black pepper
½ tsp fresh thyme leaves
½ tsp paprika (not smoked)
2 tbsp olive oil
½ tsp Xanthum gum plus 2 tablespoons of water

Set instant pot to saute. Heat ½ tablespoon oil. Season all the pork chops with salt, black pepper, thyme, and paprika. Add 2 chops to pan at a time. Brown sides and remove from pan and place onto a plate. Repeat process with the next two chops.

Sautee onion for 1 minute, add garlic and saute for 30 seconds. Place chops back in pot. Stir broth and sour cream (or yogurt together). Pour over chops and add mushrooms over top.

Close instant pot lid making sure that the steam spout is not pointing forward. Using the manual setting, enter 40 minutes. It will take about 50 minutes to cook.

Once cooked, carefully release steam by turning steam spout. Open lid once it beeps. The sauce will be a little watery. Remove chops and place onto a clean plate. Cover to keep warm.

Serve chops with a helping of sauce and mushrooms on top.
