Grilled Lemon Herb Salmon

I love salmon, but I have to admit that while bake and skillet cooked salmon is delicious, nothing and I mean nothing beats salmon grilled over charcoal. If you don't have a grill, please check out "Link" for some fantastic recommendations. You can also cook this on a gas unit or indoor grill.

4 skin on salmon fillets, 6 ounces each
2 tbsp olive oil
1 tbsp clarified butter (grass fed ghee preferred)
zest and juice of 1 small lemon
1 tbsp chopped fresh dill
1 tsp fresh thyme
1 tsp sea salt
½ tsp coarse ground black pepper

Prepare grill for medium high, direct heat. The grill should be hot enough that you can hold you hand near the cooking grates for about one second.

Combine olive oil, clarified butter, lemon juice, herbs, garlic, salt, and black pepper in a small bowl. Taste for salt content and add more if needed.

Blot salmon filets dry with paper towels and apply just oil to the skin side of the fish. Coat the flesh portion of salmon with herb mixture.

Place salmon skin side down onto grill and cook over indirect heat for 12-15 minutes, or until the internal temperature of the thickest part of each fillet reads 145 degrees F.

Remove from grill and place onto a platter. Serve with a lemon wedge on the side.
