Easy Tuna Patties

Tuna patties are delicious, but they can run a little high on excess carbohydrates if they contain bread crumbs. This recipe calls for a little almond flour and coconut flour to remedy that situation. These are perfect for make ahead meals and work well for lunch in a pinch

9 oz can of albacore tuna, drained well
6 oz chunk light tuna (in pouch), drain well if using canned
cup blanched almond flour
2 tbsp coconut flour
cup plain yogurt or sour cream (I recommend Siggi's non fat plain yogurt)
1 tbsp Dijon mustard
2 medium green onions, finely chopped
2 tbsp finely chopped flat leaf parsley (optional)
¼ tsp salt
¼ tsp black pepper
3 dashes hot sauce of choices
2 tbsp olive oil

Preheat oven for 350 degrees F.

In a medium bowl combine tuna with the remaining ingredients. It’s okay if the mixture is a bit wet. Form into roughly six, equal sized patties, about, 2/3-3/4” thick.

Heat 2 tablespoons of olive oil in a large oven safe skillet (I recommend a T-Fal skillet or a cast iron pan), as you will need to finish the patties in the oven.

Place patties into pan and cook over medium high heat for about 2 minutes or until the bottom begins to set up and brown. Using a long fish frying spatula, carefully turn patties. They will be tender, so be careful. Once turned, place entire pan into the oven and let patties cook for 12-14 minutes.

Once patties are firm and lightly browned, remove pan from oven and let stand for a few minutes before plating patties. Serve with a side salad or roasted vegetables.
