Easy Peasy Overnight Chia Pudding

I love chia pudding, but I prefer it with almond milk over coconut milk. This is a simple recipe for chia pudding that you can use to muffins, oatmeal, protein shakes, or just eat as is, before a workout. It’s a phenomenal fuel source and loaded with fiber.

2 ¼ cups unsweetened vanilla almond milk
cup chia seeds
1 tbsp unsweetened cocoa
1 tbsp real maple syrup or maple flavored monkfruit syrup
½ tsp cinnamon
½ tsp vanilla extract

Place all ingredients round air tight container. Mix well. Place lid on tightly and store in the refrigerator for 12-24 hours before consuming. I generally make this up around 7 pm, and before bed, I give it a good stir.

The seeds will create a gel the longer they stay in the liquid. If it becomes too thick as time progresses, simply add a little more almond milk to the container. Store in refrigerator for up to 7 days after preparation.
