Bean and Cheese Sweet Potato Skillets

Sweet potato nachos are just divine. If you can manage to get them a little crispy around the edges, then you'll know what I'm talking about. Use any type of bean for this recipe like pinto, black beans, garbanzo, black eyed beans, navy, etc.

1 medium-large sweet potato, long and thin (6" with a 2 1/2" diameter)
1 cup canned beans (see intro for suggestions)
¼ cup chopped onions
1 clove garlic minced
1 tbsp water
1 ½ tsp tomato paste
1 tsp cumin powder
1 tsp chili powder
½ tsp paprika
¼ tsp dried oregano
¼ tsp salt
¼ tsp black pepper
olive oil
½ cup reduced fat shredded cheddar (or vegan cheese)
¼ cup prepared guacamole
¼ cup plain non fat Icelandic yogurt (or vegan alternative)

Preheat oven for 375 degrees F.

Wash and dry sweet potato. Slice into 1/16th of an inch thick slices using a sharp knife or mandolin. Grease bottoms of small skillet or 1 medium skillet with olive oil. Arrange slices in pan(s) in a circular pattern working from the outer edges inward, overlapping slices. Place into oven and bake for 15-20 minutes, or until tender.

Meanwhile, heat 1/2 tablespoon of olive oil in a medium sized pot. Cook onions over medium heat for 2 minutes, stirring often. Add garlic, spices, 1 tablespoon water, and tomato paste. Cook for 30 seconds. Add beans and warm through for about 2 minutes. Remove from heat.

Remove skillets from oven and spoon equal amounts of bean mixture and cheese onto sweet potatoes. Place back into oven for 5, or until has melted through.

Serve nachos with guacamole and sour cream on top.
