Bacon Cheeseburger Salad

This is one of my favorite “go to” salads for when I have a serious cheeseburger craving, but don’t want to eat too much bread. I think you’ll love it too. This recipe has 3 net carbs per serving.

1 lb lean ground beef, about 90-93% lean
1 small onion, thinly sliced
6 cups shredded Boston or Bibb lettuce
4 strips of uncured bacon, cooked and chopped
½ cup shredded sharp cheddar cheese
2 medium tomatoes, seeded and chopped
1 tsp olive oil
½ tsp salt
½ tsp black pepper (add more to your liking)
For Dressing:
½ cup plain non-fat Icelandic yogurt (Siggi's)
¼ cup real mayonnaise
1 tbsp white vinegar
1 tbsp dill relish
½ tsp smoked paprika
¼ tsp salt
¼ tsp black pepper
¼ tsp granulated garlic
a few drops of hot sauce (optional)

Heat olive oil in a medium skillet. Add sliced onion and cook over medium heat for 3 minutes, turning often. Remove from pan and place into a bowl. Add beef and cook until meat is no longer pink. Season with salt and black pepper. Add onions back to skillet with beef, stir, and cook for another minute or two. Remove from heat, cover and set aside.

Combine dressing ingredients and taste for seasoning preference. Alter to suit your liking. If it remains too thick, add a little more vinegar or 1 tablespoon of water to thin it out.

Arrange ¼ of lettuce in each bowl. Add ¼ of meat (or 4 ounces) on top of lettuce, then tomatoes, bacon, dressing, and finally shredded cheese. Enjoy.
